31 Aug 15 minutes: Zucchini Kimchi Noodles
Ingredients (serves 2)
2 tablespoons Kimchi (+ extra)
Black Sesame Seeds
1 tablespoon sriracha sauce (hot sauce)
2 tablespoons sesame oil
2 tablespoons sushi vinegar
2 tablespoons honey
Bring a pot of water to a boil and cook eggs for approximately 7 minutes. In the meanwhile wash the zucchini and cut in noodles (use a spirelli if you like). Combine sriracha sauce, sesame oil, sushi vinegar and honey in a medium skillet on medium eat, combine thoroughly. Put from heat and add raw zucchini noodles plus roughly chopped kimchi, combine thoroughly.
Divide over two plates, add soft boiled eggs, black sesame seeds and extra (chopped) kimchi. Serve either cold or hot!
