03 Aug Guacamole Quinoa
- 150 gram Quinoa
- 1 Avocado (ready to eat)
- 1 tablespoon chopped fresh cilantro
- juice of ½ lime
- 2 chopped spring onions
- 1 teaspoon Chili flakes (or small piece fresh chili pepper)
- 1 teaspoon Garlicpowder
- Fresh ground pepper and salt to season
Wash, cook and drain the quinoa according to the packet instructions. Set a side and let it cool. Mash together avocado, lime juice, cilantro, spring onions, chili flakes, garlic powder, fresh ground pepper and salt. Then toss the guacamole and quinoa to combine well. Serve cold.
Change it more into a dip by doubling the guacamole part and halving the quinoa.
